The wait is over! The doors to Gills Café are officially open, and the response has been nothing short of incredible. Nestled beside the Gills Shop in Bilston, our new café is already buzzing with locals, regulars and visitors eager to try freshly cooked breakfasts, tasty lunches and of course, our signature Gills sausages. For the first time, customers can now enjoy the unmistakable flavour of Gills products straight from the kitchen.
Since opening on 13 September, we’ve been blown away by the amount of excitement and support. From our famous sausage and bacon baps to the much-loved Gills Pork Patty, the café has quickly become a favourite stop for breakfast and lunch – and it’s only just getting started.
A Café with Heritage
Our story began over 140 years ago, with a commitment to producing the finest British sausages using traditional methods and quality local ingredients. That heritage remains at the heart of everything we do, and the new Gills Café brings that tradition to life. Each meal is made fresh to order, using the same premium pork, seasoning and care that define every Gills product.
The Gills Pork Patty has already become something of a local legend. Made from our famous sausage meat using a secret family recipe, it’s rich, juicy and perfectly seasoned. Whether served in a fresh roll or as part of a cooked breakfast, it represents everything we stand for… authentic flavour, honest ingredients and consistency you can taste.
Alongside our full breakfast and lunch menu, the café also serves a selection of fresh brews and light bites, making it the perfect place for a quick coffee, a relaxed lunch or a catch-up with friends. It’s a modern space built around a proud British food tradition, where customers can enjoy a true taste of Gills hospitality.

One of the most exciting features of the new café is its warm, welcoming atmosphere. With newly added outdoor seating beneath bright red umbrellas, there’s now even more space for customers to sit, relax and enjoy great food in comfort. Whether you’re visiting after shopping at the Gills Shop, meeting friends or simply stopping by for a morning coffee, you’ll find friendly service and freshly prepared food every time.
Our café is open to both the public and trade customers, serving the same quality you’ve come to expect from our retail and wholesale ranges. The response so far has been incredible, and we’re proud to have become part of the daily routine for so many people in the Bilston community.
